Recipes from the Twilight Kitchen

As we head towards the end of daylight savings, the change of season and the glorious Autumn weather, our tastebuds are looking for a nice tasty little treat to enjoy with our afternoon tea.

The Twilight Kitchen has a couple of favourites for you to try your hand at over the long weekend.

Rock Cake
30 Servings

Ingredients

  • 45g unsalted butter
  • 100g caster sugar
  • 1 egg
  • 500g self-raising flour
  • 1/2 teaspoon ground cinnamon
  • 200g mixed fruit
  • 75ml milk

Method

  1. Lightly grease oven tray.
  2. Combine flour and cinnamon in a large bowl then rub in the butter.
  3. Stir in caster sugar, mixed fruit, egg and enough milk to make a moist but still firm consistency.
  4. Drop each rounded tablespoon of mixture about 5cm apart on the greased tray.
  5. Sprinkle with sugar and bake at 170°C for 20 minutes.

Healthy Treat Date Balls
10 servings

Ingredients

  • 150g almond meal
  • Fresh large pitted dates 12 each
  • 40g goji berries
  • 30g cocoa powder
  • 40g shredded coconut
  • 2 tablespoons maple syrup
  • 2 tablespoons black or white chia seed

Method

  1. Place all the ingredients except for the chia seeds in a food processor, process until smooth and well combined.
  2. Divide into 10 portions, roll each portion into a ball.
  3. Place the chia seeds on a plate and roll the balls in chia seeds until they are coated evenly.
  4. Place them on a lined tray in the fridge for one hour or until set.
  5. These healthy treats can be stored in an airtight container for up to two weeks.
